Rice pudding with almond milk, video recipe

Rice pudding is a time-honored traditional recipe. Surely most of you have enjoyed this dessert thanks to your mothers or grandmothers. It is a very easy recipe to prepare since it consists of boiling rice in milk but very successful. In this case we wanted to give it a different touch by using almond milk, making it suitable for people allergic to lactose.

Ingredients:
  • 1 liter of almond milk
  • 1 cinnamon stick
  • 1 c/c vanilla essence
  • Lemon peel
  • orange peel
  • 150g rice
  • 100g sugar
  • Almonds to garnish
  • Cinnamon powder
Preparation:
  1. Pour the almond milk into a large pot. Add the cinnamon stick, vanilla essence, citrus peel and let it infuse for a few minutes.

  2. Add the rice and stir for 30 minutes until the rice is almost ready. At this point, add the sugar and continue stirring for 5 minutes.
  3. Turn off the heat and remove the cinnamon and citrus peels.
  4. Serve in individual bowls, sprinkle with cinnamon powder and garnish with some almonds.
