Chickpea omelet

Tortilla de garbanzos

Although it may seem strange, tortillas with chickpeas are not new. Our grandmothers already made this recipe, especially to take advantage of the chickpeas left over from the stews or stews prepared with this delicious legume.

So we have decided to prepare it because we love it, both the flavor and the texture that this tortilla has is great. As we have said, take advantage of the chickpeas in any stew, or make them with jarred chickpeas that are already cooked. Or if you prefer it as simple as soaking your chickpeas the day before and cooking them in a slow cooker the next day, it will take very little time and it is worth it.

  • 6 eggs
  • 200g cooked chickpeas
  • Chopped fresh parsley
  • 1 chive
  • 1 clove garlic
  • Extra virgin olive oil
  1. In a bowl we beat the eggs.
  2. We put two tablespoons of olive oil in our 22cm Titan frying pan, heat and sauté the chopped onion and the chopped garlic clove as well. It must be poached over low heat.
  3. Once the vegetables are poached, add the cooked chickpeas and sauté for a few minutes.
  4. Pour the chickpeas into the bowl of eggs, add the chopped parsley, salt and mix.
  5. In the same pan we add the mixture and make our omelet. We keep the heat low so that it sets slowly.
  6. Once ready we serve and enjoy it.
