Let's celebrate the Father's Day as he deserves it best, we are going to surprise him with a breakfast of the ones you won't forget with this coffee cake.
a cake fluffy, with the intense flavor of coffee and a coverage that makes it sublime.
Ingredients:
For the cake
180g butter
150g sugar
3 eggs
180g flour
1 tablespoon of chemical yeast
50ml of coffee
For the glaze
250ml cream 35% fat matter
250g mascarpone
150g icing sugar
Preparation
- We preheat the oven to 200º.
- We prepare coffee in our Cream coffee maker and reserve.
- We grease two 18cm molds (you can use a larger one)
- We put the creamed butter and sugar in a bowl, beat with electric whisks until the mixture is fluffy.
- We add the eggs 1 at a time, we will not add the next one until it is completely integrated into the mixture.
- We add the flour along with the yeast, mix.
- Finally we add the coffee, stir until integrated.
- We distribute the mixture into the two molds. We bake at 180º, 40-45 minutes. The time will depend on the oven and how big the mold you use is. Click before taking out to check that it is ready.
- Remove and let cool on a rack.
- While the cake is making, we will make the frosting or topping. For this, we put all the ingredients in a bowl and beat with electric whisks until it has a firm consistency. We put it in the refrigerator.
- Once cold, unmold and cut in half if you use a larger mold, if you use an 18 you can cut in three layers.
- We assemble alternating layers of cake and frosting.
- We cover our cake with the glaze and decorate with coffee beans and instant coffee.
