Summer invites quick, fun and appetizing recipes. These tacos are perfect to share by the pool, with a refreshing drink, do you fancy the plan?

Ingredients
500g chicken breast
1 onion
1 red pepper
1 green pepper
1 yellow pepper
Salt
Pepper
Chile (Optional)
fresh cilantro
1/2 purple onion
Juice of 1 lime
Extra virgin olive oil
Corn tacos or tortillas
Preparation
We cut the vegetables into julienne strips.
We clean the chicken breasts and cut them into strips.
We cover the bottom of our Copper frying pan with olive oil, heat and add the chicken strips, sauté until ready.
We take out and reserve.
Add the vegetables to the pan and fry until softened. Once ready, we add the chicken strips that we have previously shredded.
We sauté for a few minutes, season with salt and pepper and take out.
We fill the tacos with the sofrito, we add some thin slices of red onion to give a refreshing touch and crunch, we add the lime juice and the chopped cilantro.
We serve and enjoy.
