Ingredients
2 salmon loins
250g assorted mushrooms
1 onion
150ml dry white wine
200ml liquid cream
Salt
Ground black pepper
Extra virgin olive oil
ground nutmeg
Fennel powder
fresh dill
Preparation
- In our Amazonia frying pan we put a little olive oil, heat and brown our salmon loins. Preferably over medium-low heat so that they brown on the outside and are cooked to perfection on the inside. We take out and reserve.
- In the same pan, taking advantage of the salmon juice, add the chopped onion and sauté until soft.
- Add the cleaned and chopped mushrooms, sauté until golden.
- We add the wine, salt, pepper, nutmeg and fennel (spices to taste). We cook until the alcohol evaporates.
- Once reduced, we add the cream, cook for a few minutes to mix (shred if we want a finer sauce) and add the salmon loins, let it cook for a few minutes and serve.
- We decorate with fresh dill.
