This homemade ratatouille is one of our favorite dishes. A dish that has been spreading throughout our geography and with many variations. The base is vegetables, and you can use more or less depending on each place or each person's taste. Ours, a traditional ratatouille with the usual ingredients.
Ingredients:- 1 zucchini
- 1 eggplant
- 1/2 red pepper
- 2 green peppers
- 1 onion
- 3 garlic cloves
- 4-5 ripe tomatoes
- Extra virgin olive oil
- Salt
- We wash the vegetables and chop them.
- We cover the bottom of our XTREM 28cm frying pan with olive oil. Heat and add the garlic and chopped onion, sauté until softened.
- Next we add the peppers, the red and the green ones. We leave it for a while until they are tender.
- Add the zucchini and eggplant, sauté for a few minutes.
- Finally, we add the peeled and chopped tomato, salt it and let it cook over low heat until it releases the water and becomes thick.
- We serve accompanied by a fried or grilled egg.
