We are big fans of Jamie Oliver and we fell in love with this recipe. Greek style potatoes with eggs would be a version similar to our poor potatoes but with some variation in its preparation. With these few and basic ingredients that are never lacking in our pantry, we get a dish that everyone likes and it is truly crazy.
Ingredients:- 1 kg of potatoes
- Extra virgin olive oil
- 1 onion
- 4-5 eggs
- Fresh parsley
- Salt

Peel the potatoes and cut them into wedges or squares, not too fine.

We put our 24cm Óptima saucepan. Heat with plenty of water and once it starts to boil, add the potatoes. We leave them for 10 minutes, remove and drain.
- While the potatoes are cooking, cut the onion into julienne strips and sauté it in our 24cm Mineral frying pan. with two or three tablespoons of olive oil.
- In another 28cm Mineral pan. We add plenty of olive oil and once hot we add the drained potatoes. We fry until golden. They should be crispy on the outside and tender on the inside. Once ready, we take it out on a plate with absorbent paper and let the excess oil drain.
- Add the potatoes to the onion pan, stir.
- In a bowl we beat the eggs well and add it to the potatoes, salt, mix and let it set. Depending on how you like it more, you can add more or less egg.
- Once ready we serve and decorate with chopped parsley.
