Ingredients for 2 people
● 200 g of spaghetti
● 2 strips of bacon
● Ricotta Cheese
● Dried tomato in oil
● Some pine nuts
● For the sauce:
○ 300 g fresh spinach
○ 1/2 fresh red chilli
○ 1 clove of garlic
○ 300 ml of whole milk
○ Grated Parmesan
preparation of the recipe
1. Put the bacon in a Solid+ frying pan with hardly any oil. Brown until crispy. Take out and reserve.
2. In the same pan, brown the garlic clove and chilli. Next, add all the spinach until it reduces.
3. In a mixing glass, add the contents of the pan and add the milk and grated parmesan. The sauce should be somewhat thicker than milk but less than cream.
4. While the pasta is boiling in hot water, heat the sauce in the same pan. With the heat it will take on a very striking green color.
5. When the pasta has a few minutes left, we put it in the sauce pan with a little cooking water. Let everything cook for the last few minutes until the sauce thickens.
6. We finish by mixing with the crispy bacon, dried tomato and pine nuts. We top with the ricotta and a little grated Parmesan cheese and drizzle with a splash of olive oil.
