250g fresh or dried pasta
150g fresh peas (shelled)
2-3 tablespoons unsalted butter
half orange juice
Salt
Zest of the half orange
Elaboration
- In a bowl, mix the butter, orange juice and zest. We put the Professional pan over low heat and melt. We reserve.
- We put our Optima saucepan with plenty of water and salt on the heat, once it starts to boil we add the peas. We cook for 3 minutes. We take out, cool under the tap and reserve.
- In the same water, we add the pasta, if necessary we would add more. We cook the pasta according to the manufacturer's recommendation.
- Once cooked, we move to the pan where we have the butter mixture, sauté to give it flavor, add the peas and sauté for one or two minutes.
- If we want them to be creamier we can add a little water from cooking the pasta.
- We serve with a little orange zest and fresh thyme.
