250g fresh or dried pasta

150g fresh peas (shelled)

2-3 tablespoons unsalted butter

half orange juice

Zest of the half orange

  1. In a bowl, mix the butter, orange juice and zest. We put the Professional pan over low heat and melt. We reserve.
  2. We put our Optima saucepan with plenty of water and salt on the heat, once it starts to boil we add the peas. We cook for 3 minutes. We take out, cool under the tap and reserve.
  3. In the same water, we add the pasta, if necessary we would add more. We cook the pasta according to the manufacturer's recommendation.
  4. Once cooked, we move to the pan where we have the butter mixture, sauté to give it flavor, add the peas and sauté for one or two minutes.
  5. If we want them to be creamier we can add a little water from cooking the pasta.
  6. We serve with a little orange zest and fresh thyme.
