Pasta with cauliflower and crispy ham

Do you feel like a pasta dish but know you should eat vegetables? That's easy peasy! You just have to prepare a pasta dish, with vegetables, easy right? The dish we propose today is wonderfully colorful and combines cauliflower, brussels sprouts and crispy ham to give it that extra touch that vegetables need if we are not big fans of them.

A little parmesan, pepper and in the pan!

Cauliflower Pasta and Brussels Sprouts Recipe with Crispy Ham

Ingredients

  • 2 tablespoons extra virgin olive oil
  • 80 g of Serrano or Jabugo ham
  • 2 cloves of garlic
  • 200 g brussels sprouts
  • 250 ml liquid cream
  • 3 egg yolks
  • 40 g grated parmesan or pecorino powder
  • 400 g pasta previously cooked al dente (in the photo: casarecce)
  • salt and freshly ground black pepper

Preparation

  1. We heat the oil in a non-stick frying pan like this lilac one from Monix. Add the ham and cook for a couple of minutes on each side until crispy.
  2. We drain on absorbent paper and reserve.
  3. Add the cauliflower and brussels sprouts to the pan and brown for about 5 minutes.
  4. Add the garlic, sauté for another minute.
  5. In a separate bowl, mix the cream, egg yolks and parmesan.
  6. Add the pasta, cream mixture, salt and pepper to the pan and stir for about 2-3 minutes or until the sauce has reduced slightly.
  7. We serve with the ham on top and extra powdered Parmesan cheese.
