Scissor pasta with vegetables and Asian sauce

Have you ever tried homemade scissor-cut pasta? It's fun, quick to make, and the result, with this Asian sauce, is incredibly flavorful! Ingredients (for 2 people):

For the dough:

  • 250 g of all-purpose flour
  • 120 ml of water
  • 1 teaspoon of olive oil
  • A pinch of salt

For the stir-fry:

  • 1 clove of minced garlic
  • 1 spring onion
  • 1/2 chili
  • 2 tbsp soy sauce
  • 1 tbsp agave syrup or brown sugar
  • 1/2 tsp sesame oil (optional)
  • Juice of 1/2 lime
  • 1 handful of fresh spinach
  • Fresh sprouts for decoration
  • Vegetable oil for sautéing

Steps:

  1. Homemade Dough: Mix all ingredients and knead until smooth. Let rest covered for at least 30 minutes.
  2. Scissor cut: Roll out the dough and cut strips directly over boiling water with scissors. Cook for 2–3 minutes, drain, and set aside.
  3. Sauté the sofrito: In the One Click Pietra pan, sauté the garlic and onion with a little oil. Add the chili.
  4. Add the sauce: Stir in the soy sauce, syrup, and sesame oil. Stir until caramelized.
  5. Add the spinach, sauté for a minute and add the pasta.
  6. Finish: Squeeze lime over the top, add the sprouts and serve hot.
