Making a vegetable stew is the easiest and it is also one of the best ways to take advantage of those vegetables that are always left over at home, because we can make many variations, choose the vegetables that you like the most or simply take advantage of the ones you have in your pantry. .
Ingredients:- 1 onion
- 2 carrots
- 300g green beans
- 200g peas
- 200g broccoli
- 4 artichokes
- 2 cloves of garlic
- 1 slice of day-old bread
- Salt
- Olive oil
- We wash the vegetables, cut the carrots into slices or dice, remove the outer leaves of the artichokes and cut them into quarters, chop the beans and separate the broccoli seedlings.
- We put a large saucepan with water on the fire and heat until it starts to boil.
- Once the water starts to boil, add the artichokes, broccoli, beans and carrot. Each vegetable has a cooking time so beans, broccoli and carrots will take approximately 15 minutes. Take out and leave the artichokes for a few more minutes until they are tender.
- In our Solid+ frying pan we put a little olive oil, heat it and add the garlic and the slice of bread, brown it, take it out and crush it in a mortar until we obtain a paste. We reserve.
- In that same oil we add the chopped onion, sauté, once poached we add the cooked vegetables and the peas, sauté for a minute, add the mashed bread with garlic and a glass of the vegetable cooking water. Let's salt.
- Stir until combined and let the sauce reduce.
- We serve and enjoy it.
