Surely all of you have heard of trinxat , better known as Trinxat de la Cerdanya , or cabbage trinxat. It is a dish composed of cabbage, potato and bacon (cansalada).
Although it seems complicated to prepare, it is not at all, the result is exquisite and it is an ideal dish for these cold times, plus cabbage is in full season.
Trinxat De La Cerdanya
Ingredients
- 1 winter cabbage
- 1 kg of potatoes to boil
- 4 cuts of smoked bacon (cansalada)
- extra virgin olive oil
- salt and pepper
Preparation
We peel and cut the potatoes into cubes. We clean the cabbage, separate the leaves and cut them into strips.
We put the potatoes to boil, after 15 minutes we add the cabbage and a pinch of salt, we let it boil for about 10 more minutes, until the potato is completely cooked, to the point of falling apart.
We cut the smoked bacon (cansalada) and fry it in a pan (you can put a little garlic in the pan to give it even more flavor).
We drain the cabbage and potato well and mash it and mix with a fork, add the bacon and mix.
Now we will make a potato omelet shape in the pan, browning it on both sides. You can decorate with a little oil sprinkled on top and a little bacon.
You can eat it as a single dish or as a companion to a meat dish. Although I already warned that as a single dish it is perfect!
