You already know that pressure cookers reduce the cooking time of dishes by up to two thirds, without spoiling the properties of the food. That is why one of the perfect dishes to cook in a pressure cooker is broth, any type of broth, especially those that are meat or fish because these require up to three hours of cooking, something that we do not normally have available and which also involves the expense of electricity and gas.
The recipe that we propose below is the basic one for chicken broth, you can adapt your own recipe that you make at home all your life, the only thing you should keep in mind is that you should add less water than you usually add since this barely It evaporates unlike the traditional way of making broth.
How to make chicken broth in the Easy Monix quick cooker
Ingredients
- 2 kg of chicken (carcass, wings, legs, breasts and neck), previously washed
- 2.5 liters of water
- 3 large carrots, peeled and chopped
- 2 pieces of celery cut
- 2 peeled onions
- 1 turnip
- 1 dried bay leaf
- 1 teaspoon black pepper balls
Preparation
Once the chicken has been washed, we put it in the slow cooker along with the water, without the lid. Let it come to a boil over medium-high heat. When it starts to foam, we will remove the impurities with the help of a slotted spoon.
We add the vegetables, bay leaf and pepper.
We cover with the lid of the pressure cooker, closing with the safety closure and put on high heat. As soon as steam starts to come out, we will lower the heat to minimum (just enough to maintain the pressure) and cook for about 30 minutes.
We let the pressure come out completely naturally for about 20 minutes, until the pressure gauge has completely dropped. If we do not have time, we will place the pot under the cold water tap until the indicator goes down.
We remove the lid, being careful not to let the steam come into our faces. Let the broth cool completely and strain it through a clean cloth or cloth so that no impurities remain. We place it in airtight containers in the refrigerator and as soon as it has cooled we will remove the part of fat that has formed on the top layer.
Now we can use this broth for soups, stews, creams... Remember that you should never add salt when preparing the broth.
