Blinis

Blinis are a type of pancake or crepes of Russian origin. Its base ingredients are flour, eggs, milk and yeast, a recipe that you can make both sweet and savory. We propose these blinis as a simple and delicious appetizer, for a festive lunch or dinner or simply to enjoy an evening in the best company.

Ingredients:
  • 200ml milk
  • 100g flour
  • a pinch of salt
  • 20g fresh yeast 1 egg
  • Butter for greasing

  1. We put the flour and salt in a bowl and mix.

  2. We dissolve the fresh yeast in the warm milk.

  3. We separate the white from the yolk. We beat the yolk and add it to the flour along with the milk. We mix until the ingredients are integrated and let the mixture rest for an hour.

  4. We whip the egg whites until stiff and add them to the dough with enveloping movements.

  5. We grease our 20cm Unique frying pan . With a little butter, put it over medium heat and pour the dough with the help of a spoon. Once it is ready on one side, we turn it around so it can be done on this side. We must put the heat on low so that it cooks well inside and does not remain raw.
  6. We should not make the blinis too large, ideally they should be bite-sized.
  7. We repeat the operation with all the dough.
  8. We serve warm accompanied by cream cheese or mascarpone, grapes, salmon, quail eggs. There are many variants, choose the one you like the most and the more varied the better.
