Artichokes in saffron sauce

Ingredients:

6-7 artichokes
1 carrots
2 onions
1 tbsp of tomato
1 clove garlic
1 glass of wine
Saffron
1 bay leaf
1 L of vegetable broth

Steps:

1. We peel the artichokes until the most tender part is left and we put them in a bowl with water, ice and lemon so that they do not oxidize.
2. We boil the artichoke approx. 15-20 min.
3. Meanwhile we are going to chop the onions, garlic and carrots as finely as possible.
4. We add oil and begin to fry the onions, carrots and garlic.
5. We add the wine and stir.
6. When they have taken on a slight color, add the tomato and leave for 5-10 minutes over medium heat.
7. Add the vegetable broth, bay leaf and saffron and let it boil for about 25 minutes.
8. You can blend everything with a blender so that it becomes a more homogeneous sauce or leave it as is.
9. We add the broken artichoke hearts and serve.
